1/ The characteristics of gac bep pork

 2/ The processing of gac bep pork

Depending on each region, there are a lot of different ways to process gac bep pork. At some places, the pork is cooled and put in the mortar with a sufficient amount of salt to make the pork more savory. Then, people mix the pork with a kind of yeast made from the forest tree, brew it for 2 or 3 days and hang it up in the kitchen. Otherwise, some other places keep the taste of the pork by marinating it with salt in nearly a dozen hour and also hang it up in the kitchen. In addition, gac bep pork can be fried with ginger, bitter vegetable or lemon leaves. Especially, people always take the wormwood forest and sugarcane bagasse to broil the pork in order to make it more fragrant. When the pork is completely ripe, it is very crispy but not fleshy, creating a charming taste attracting a lot of tourists in Sapa tours.
